Ingredients

10-14 oz. Steaks

3 tbsp Extra Virgin Olive Oil (separated in half)

Directions
Start by trimming off any fat or muscle tissue on the outside. Score steaks across one direction several times (slicing shallow lines across steak). Hammer steaks gently to loosen tissue.
Dress steaks with 1 1/2 tbsp of olive oil (be sure to cover every inch). Rub & pat AMAZING GRACE on all sides of steaks. Place steaks into ziplock bags, press out all the air, store the bag in a refrigerator overnight to help develop the flavor.
Step 2:
Next day, turn oven on 350 (degrees Fahrenheit).
Remove the steaks from the refrigerator & remove them from bag. Sit the steaks out on a plate at room temperature for 30 minutes (never put cold meat onto heat). Sear all sides of the steaks for 2-3 minutes each side.
Lightly oil or spray a sheet pan & place them in the oven for 12-13 minutes at 135 degrees Fahrenheit if you want a medium rare finish. Remove from the oven & heat to rest meat for 7 minutes.

Recipe Note
Both hammering & seasoning the steaks help with tenderizing the tough tissue, that is why it is paramount to score the steaks before to both steps, so it can help jumpstart the tenderizing process.
The longer the steak marinades, the deeper the flavor.
