A dish suited for appetizers or even dinner for yourself. Mini tamale like meatballs flair with a sweet & spicy kick.
Ingredients

1 packet of sweet yellow cornbread (6 - 6½ oz)
-
2 cans of red enchilada sauce (10 oz each)
-
1+ lbs. maple ground breakfast sausage
-
1 small can of “Hunts” brand tomato sauce (8 oz)
-
1 block of Colby Jack cheese (not pre shredded)

¼ cup or more HARVEST
Directions
Make the cornbread per instructions and crumble afterwards.
Combine crumbles, pork, 1 can of enchilada sauce, tomato sauce & HARVEST seasoning. mix well together.
Use half the other can of enchilada sauce to pour at bottom of crockpot. Roll mixture into 1+ oz balls. Relative to ping pong size. Place in crockpot, it’s okay to overcrowd. Pour remaining half of enchilada sauce can on top of balls.
Cover with lid and cook 3 - 4 hrs. on High or 4 - 6 hrs. on low.
Shred the cheese over the top of the dish when done cooking meat. Cover & let cheese melt before serving.
Recipe Note
I prefer to use "martha white" brand sweet yellow cornbread in a pinch.
using a block of cheese rather than "pre shredded" gives a better melting point.
